Salsa de Doña Elvia


INGREDIENTS:

  • 4 (2 green /2 red) large tomatoes
  • 2 large vidalia or spanish onions
  • 1 bunch fresh cilantro (coriander leaves)
  • 1 cup lemon juice
  • 2 cups vinegar

METHOD:

  1. Chop tomatoes coarsely
  2. Chop the cilantro and onions finely
  3. Combine with lemon juice and vinegar
  4. Let stand 30 minutes prior to serving (Makes about 4 cups)
